Merlot doesn’t have to be a light wine; this Merlot is packed with flavour as a result of our hands on and quite frankly, labour intensive winemaking techniques. Deep red colour matched with an intense aroma of plum, berry, coffee and chocolate gives your senses a hit.
The grapes were grown in a single vineyard within a hidden little valley 1km South West of our cellar door. The particular site is nestled on a slightly sloping vineyard rooted in some of the oldest soils in South Australia featuring a shallow slate, providing ideal drainage.
Hand picked and crushed into 4 open fermenters, the grapes were left on skins for 5 days with 6-hourly hand plunging around the clock, then gently basket pressed with close monitoring of pressures for just the right extraction. The Merlot was aged for a extended 36 months in 100% French oak hogsheads developing complexity and subtle vanilla influences.
This is far from light and watery, here you'll find a complex fruit and tannin structure with plenty of body. The colour is typical of our hand plunged wines being deep, rich and dark red, with just some hinting hues of barrel aging. You'll find this Merlot is intensely aromatic, with plenty of plum and berry with some spice and hints of coffee and chocolate. The mouthfeel is round and smooth with great length of palate, again showing plum, chocolate and coffee.
We love the majestic old river red gums nestled throughout our Eden Valley estate, and the great hollowed out gum depicted on the label is our favourite. This magnificent timeworn tree has witnessed hundreds of years of history and provided accommodation for both native fauna and long-distant families alike.
